Much smaller, with an extremely fine screen, and much less expensive than the Paderno skimmer in the last issue is a Japanese skimmer (mine is stamped “Green Bell”). Compared with the large one’s diameter of 16 cm (6¼ inches), which is too much to wield in a small pot, the Japanese one is only about 10 cm (4 in) in diameter, and the price on Amazon is just $8. It’s not clear to me that the finer screen is an advantage — both screens effectively remove fat and scum from the surface of broth — although the small one, because of its size, also works as a tea strainer. The fine screen stays open in a good dishwasher. (Recommended by Tse Wei Lim.) ●
